True story: My 6-year-old doesn't like cake. Or candy. Or cookies. Or brownies. Sometimes, I wonder if we're related at all. The one dessert that he loves and asks for at every celebration are Rice Krispies Treats. With an activity-packed Summer coming up, I've been experimenting with new combinations for his favorite treat and I am so excited to share our favorites with you! These hearty additions are sure to keep the fun going all day long!
Cereal has become somewhat of a staple in our house. With the added vitamins and minerals, it adds a nice crunch to the kids' yogurt and forms the basis for many of their trail mixes. It doesn't melt in the hot Summer sun and it's easy enough for them to fix themselves. It's so quick and versatile that it makes it easy to make the most of Summer. These treats are perfect to bring along with you to the pool, on road trips, to family gatherings, or even for the kids' sleepovers. You can look like a star with virtually no effort!
Peanut Butter Banana Rice Krispies Treats
These are a hit with the kids and I love them because the added peanut butter gives them long-lasting energy and I feel better about sneaking some banana into their treats!
For these, you'll need:
3 Tablespoons butter
5 cups mini marshmallows
1/2 cup natural peanut butter
1 small banana, mashed
6 cups Kellog's Rice Krispies
chocolate chips (optional)
Spray a 13'' x 9'' baking pan with olive oil cooking spray and set aside. Melt the butter in a large pan over medium-low heat. Once melted, stir in marshmallows, peanut butter, and mashed banana, stirring constantly. Remove from heat as soon as the marshmallows have melted and everything combines together. Stir in Rice Krispees and transfer to a prepared 13'' x 9'' baking dish. Press into the pan using a spatula sprayed in cooking spray. Let cool and cut into bars or squares.
*I drizzled ours with melted chocolate chips for some added sweetness. Let's face it, peanut butter and banana just calls for some chocolate-y goodness!!
Chocolate Chip Craisin Rice Krispies Treats
These are my personal favorite and disappeared from our kitchen faster than I care to admit. The boys are begging for me to make more for their camp lunches and I've already had a request to make them for my 3-year-old's birthday party!
For these you'll need:

1 cup craisins, roughly chopped
1 cup dark chocolate chips, frozen
6 cups Kellogg's Rice Krispies
Spray a 13'' x 9'' baking pan with olive oil cooking spray and set aside. Melt the butter in a large pan over medium-low heat. Once melted, stir in marshmallows, stirring constantly. Remove from heat as soon as the marshmallows have melted. Stir in Rice Krispies, chopped craisins, and frozen chocolate chips and transfer to a prepared 13'' x 9'' baking dish. Using frozen chocolate chips helps to keep them from melting completely into the mixture. Press into the pan using a spatula sprayed in cooking spray. Let cool and cut into bars or squares.
