Mama's Lactation Cookies

Even though we don't currently have any small babies in the family, my good friend Sarah was sweet enough to share her new recipe for Lactation Cookies. She is a working mom with two little girls and knows all about finding time to pump between classes and organize her day to balance both work and home.

I don’t struggle with my milk supply in the sense that I don’t have enough to feed my baby when I’m with her.  I do struggle some days when pumping to get the amount that she needs at daycare.  I’m away from her for 8 hours and can only pump twice in that time – three times and I’d be good to go I’m sure.  I usually get a good 3 ounces per side each pumping session.  There are days when I’m stressed or in a hurry that I only get 1 or 2.  I don’t have a large freezer supply due to excess lipase issues (I do the scalding techniques, but worry about the nutrients being destroyed).

After trying some other items on the market, I was a little tired of my students asking who had pancakes and syrup for breakfast!  So, I started looking up lactation cookie recipes.  I compared all the ingredients and the reasons for each one and created my own recipe.  I researched the Brewer’s Yeast and bought the expensive can.  I figured it was cheaper than buying formula to supplement during daycare! 

This is my second time making the cookies and they turned out just as good as the first time.  They are delicious right out of the oven with a glass of milk.  I freeze the cookies in baggies of 10 to keep in the freezer at work so that I can eat two roughly two hours before my pumping session.  I’ve noticed a slight increase so that I get an extra 2 or 3 ounces per day.  And really, that’s all I needed!  The calorie content is high.  I use these as my extra calories I need to produce the milk in the first place!  Make the cookies smaller or play with the ingredients to make them healthier.  The oats, yeast, and flax are the ingredients that help with production.

4 tablespoons water                              1 teaspoon salt
1 cup Flaxseed Meal                             1 teaspoon baking soda
½ cup unsweetened applesauce           1 ½ cups whole wheat flour
½ cup coconut oil                                  3 cups Old Fashioned Oats
½ cup sugar                                          4 tablespoons Brewer's Yeast
½ cup brown sugar                                ½ cup mini white chocolate chips
2 eggs                                                  ½ cup Craisins
1 teaspoon vanilla

  1. Mix 4 tablespoons of water and flaxseed meal in a bowl – set aside.
  2. In a stand mixer, combine coconut oil, applesauce, sugar, and brown sugar.  Mix well.  It will not be creamy like chocolate chips cookies made with butter.
  3. This is usually when I remember to preheat the oven - Pre-heat oven to 350 degrees.
  4. Mix in eggs, vanilla, and your flaxseed meal mixture.  Mix well.
  5. Add your flour, oats, and fun ingredients (chocolate chips, apple pie spice, etc).  The dough will be sticky.  It takes me 15 minutes to get to this point.
  6. I used a pampered chef cookie scoop – the 1” size I think and placed 12 scoops on a cookie sheet with parchment paper.  You could make the cookies smaller. 
  7. Bake for 9 minutes.  They will be slightly soft when you take them out.  Remove to the counter or a baking rack to cool.  I don’t let them sit on the cookie sheet because I want to put the next batch in and minimize my hands on time with these.
Yield: 4 Dozen
~102 Calories per cookie as prepared

These are so yummy and the best part is that you can adjust the ingredients to suit whatever craving you might have at the moment!
