Summer Chicken Fajitas

I'm not sure if these are considered tacos or fajitas - really my family's not that concerned because what we know is that they. are. yummy!! Go ahead and add this to your menu for this week.  You will NOT be disappointed!  Best of all, you can prep them in the morning or during naptime and everything is ready to be grilled up at dinner in less than 20 minutes.
Ingredients:
2 lb. chicken breast
4 Tablespoons olive oil
1 Tablespoon chili powder
1 Tablespoon cumin
1 teaspoon pepper
1/2 teaspoon garlic
1 teaspoon oregano

1.  Mix oil and spices in a medium bowl.

2.  Because I wanted to marinate both my chicken and the vegetables, I divided the marinade and put half in a gallon-size Ziplock bag.  I put my chicken breasts in the bowl and mixed well to coat.  Then, I covered the bowl with plastic wrap and put it in the refrigerator to marinate.

3.  While the chicken was marinating, I set to work chopping up the veggies.  I love this meal because I can prep things while the kids are napping and it's ready to grill when my husband gets home. 

4.  The chopped up vegetables went into the Ziplock bag with the marinade for a good shaking.  If you happen to have your kids in the kitchen with you, this is a great way to get them involved.  Let them shake, shake, shake 'til their hearts content!  Then, place the bag in the fridge and enjoy what's left of naptime.

5.  When you're ready for dinner, toss the chicken on the grill and cook a few minutes on each side until cooked through.  Don't these look amazing??  While they're grilling, spray a saute pan and toss in the vegetables. 

6.  Cook the vegetables until tender and slightly charred, about 10 minutes.  While the vegetables saute, go ahead and slice up your chicken in 1/2 inch strips against the grain.  Then, transfer to a serving dish.  Add the vegetables once they are finished.

Serve with warm tortillas, cheese, sour cream and guacamole!  I love how flavorful and colorful this dish is.  It's an easy way to get your kids to try lots of different vegetables, especially when they get to assemble their fajitas themselves.
