Eclair Cake - So Much For My Diet!!

Okay, who am I kidding? I'm not even pretending to be on a diet! In fact, I am enjoying every single snack and dessert while I can :) I'm sure I'll need to get serious about losing all this "baby weight" (that's totally not from the baby) here in a few months, but until then I'll enjoy my desserts, thank you very much :)

When my husband and I married, a dear friend of mine gave me a journal filled with her favorite recipes. Over the years, I've added our family favorites to it and it's become one of my most cherished possessions. One of our favorite recipes, and one my brother-in-law asks for, is the Eclair Cake! It is so simple and tastes amazing. This week, one of the daycare kids celebrated her 5th birthday (it goes so fast!!), so while she was at Preschool, the rest of the kids helped me whip this up for her. I added some sprinkles to their pieces to make them more festive and I think everyone enjoyed their cake!

Ingredients:
2 small boxes French Vanilla Pudding
3 cups milk
large tub of Cool Whip
box of graham crackers (we use the honey ones)

Icing:
1 cup sugar
1/3 cup cocoa
1/8 teaspoon salt
1/4 cup milk
1/4 cup butter
1 teaspoon vanilla

1. Beat pudding and milk until it reaches a pudding consistency. Fold in Cool Whip.
2. In a casserole dish, layer graham crackers, 1/2 the pudding mixture, crackers, other 1/2 of the pudding mixture, and top with crackers.
3. In a medium saucepan, mix sugar, cocoa, salt, and milk. Bring just to a boil, stirring constantly. Continue stirring for about 5 minutes. Remove from heat and add butter and vanilla.
4. Pour the chocolate icing over the cake and refrigerate several hours to set.
