Semi-Homemade Lasagna - Our Go-To "Company" Dinner

Years ago, I fell in love with Semi-Homemade Cooking with Sandra Lee. Of course I want to make everything from scratch and have it be healthy and just sometimes gets in the way. Honestly, I don't have time (or energy) to make everything from scratch, but I still want my family to have great food. This is one of my favorite semi-homemade recipes. I've adapted it throughout the years making it something that my family absolutely loves!! The reason it's my go-to dinner for company is that I can make it ahead of time while the kids or napping or even the night before. Then, I can spend the time before our guests arrive picking up last minute toys or changing out of the shirt that the baby just spit up on - again!!

1 package lasagna noodles (I've used the oven-ready variety, but I prefer boiling my own)
1 lb ground turkey
3 cans tomato soup
2 Tablespoons apple cider
16 oz. cottage cheese
8 oz mozzarella cheese, shredded
1 onion, diced
1/2 green pepper, diced
1 Tablespoon oregano
1 teaspoon garlic

1. Preheat oven to 350 degrees. Cook noodles according to package direction.
2. Brown turkey and drain. Add onions, green pepper, soup, vinegar, oregano, and garlic. Simmer 20 minutes. (Tip: I sometimes saute 1/2 onion and the green pepper separately and puree them with 1/2 can of tomato soup to sneak in the veggies.)
3. Layer noodles in a 13"x9" pan. Spread cottage cheese over the noodles. Top with sauce and a layer of mozzarella cheese. Repeat for 3 layers. Finish with mozzarella cheese. (I usually only get through 2 layers)
4. Bake 30 minutes.

*This is also a great recipe to double and freeze. If you plan to freeze one, I recommend using extra sauce to keep it from drying out.
