Chocolate Chip Banana Bread the Kids Will Love!

I'm not sure you could classify this as healthy by any stretch of the imagination, but I'm going to choose to believe I'm getting some extra potassium with all the bananas :)  That being said, this recipe is way too yummy to pass up - and adding the chocolate chips means that the kids are more likely to gobble it up!

For this recipe, we used:
1 cup sugar
1/2 cup butter
2 eggs
2 teaspoons vanilla extract
3 bananas, mashed
2 cups all-purpose flour (you can substitute 1 cup of whole wheat and 1 cup for all-purpose for this)
1 teaspoon baking soda
1/2 teaspoon salt
1 cup semisweet chocolate chips (we used miniature chips)

1. In a mixing bowl, cream sugar and shortening.

2. Beat in eggs, vanilla and bananas until thoroughly blended.

3. Combine flour, baking soda and salt in a separate bowl. Add the flour mix to creamed mixture and stir just until combined.

4. Fold in chocolate chips.

5. Spoon into a greased 9-in.x 5-in. x 3-in. loaf pan.

6. Bake at 350 degrees F for 60-70 minutes or until the bread tests done with a wooden pick. Cool in pan for 10 minutes before removing to a wire rack to cool completely.
